Description

Drinking well from release and holding through 2035, the Gaspard Brochet ‘Lion’ Blanc de Noirs Extra Brut Tome VII is disgorged only once it is ready — every release rests on cork for roughly two years before being disgorged by hand. Tome VII is drawn from the 2023 harvest: pure Pinot Noir from the 1985-planted parcel in Le Mont Benoit, picked at full maturity and raised in barrel without racking or topping.

As a result, expect the vinous weight and chalk-driven salinity that carry this cuvée from Tome to Tome, framed here by a generous, early-ripening season. Production of the Gaspard Brochet Lion Tome VII is measured in hundreds of bottles, from a domaine that releases about 8,000 in total each year.
