De zes hectare wijngaard is beplant met Chardonnay (in de gemeenten Cramant, Chouilly, en Cuis) en Pinot Noir in Avenay-Val-d'Or, in de Grandes Vallées de la Marne. In 1986 besloten Eric Dhondt en Edith Grellet druiven niet meer aan handelaren te verkopen en richtten Dhondt-Grellet op. Hun zoon Adrien, inmiddels in de twintig, nam de wijnmakerij over en bracht de familie-wijnen snel naar een hoger niveau. Langzaam breidde hij het gamma geproduceerde Champagne uit, door zijn eigen domeinen te isoleren in de dorpen Cramant en Cuis en zuivere Chardonnay-expressies te bottelen.Roc Solare is een blend van Chardonnay (90%) en Pinot Noir (10%), verbouwd op silexbodems in de Côteaux du Sézannais. De wijngaard is 45 jaar oud. De basis-jaargang (2021) vormt 70% van de blend, terwijl de resterende 30% afkomstig is uit een perpetuele reserve die teruggaat tot 1986. De wijn rijpt in roestvrijstalen fusten en vaten. Hij werd in augustus 2022 gebotteld en in september 2024 dégorgé. Based in Flavigny, near Avize, in the heart of the beautiful Cuis and Cramant terroirs, he manages his micro-estate with panache and conviction, drawing inspiration from the practices of his close friend, Guillaume Selosse of Domaine Jacques Selosse! Convinced that great emotions come first and foremost from the terroir, he takes particular care with this Terres Fines cuvée from Cuis, where the old vines find a vein of pure chalk beneath 30 cm of clay, giving the wine a stunning minerality. The chalk notes accompany splendid aromas of dried fruit, roasted apple, and hazelnut; the palate is wonderfully full and contrasted by a fine, elegant acidity. The extra-brut dosage and extremely low SO2 levels allow the terroir to express itself fully in this luminous wine. Every taste bud vibrates with every sip; it’s simply brilliant!
